Easter has
been the main focus of our baking this month but there's been plenty
more to enjoy as well! Let's see what cakes we've been making this
month.
Chocolate
cupcakes are welcome at time but getting the right recipe for a
gluten free version can be tricky. Kate at Gluten
Free Alchemist has been revisiting her Gluten Free Chocolate
Cupcake recipe and decorated them especially for Easter with some
Italian buttercream and mini eggs.
Kate always
comes up trumps when it comes to gluten free celebration cakes and
her Banoffee
Sponge Cake is her latest triumph. It's layered with freshly
whipped cream, toffee sauce, crunchy biscuit crumbs and topped with
chocolate curls.
Also going
gluten free this month is Choclette from Tin
and Thyme. She has been inspired by the Filipino Christmas treat
of bibingka to make a batch of gluten free coconut cakes.
Traditionally bibingka are made with rice but these have a mixture of
gluten free flour and coconut flour in. They are usually eaten at
breakfast time but I think one would go down well at any time of the
day!
I got into
the Easter spirit with a batch of White
chocolate blondies with Mini Eggs. Without the Mini Eggs they can
be made at any time of year. These will be a particular favourite of
those who like white chocolate as there is a lot of it in this
recipe!
I went back
and revisited one of my classic Easter recipes with a traditional
Simnel
cake. Any excuse to be to eat some marzipan!
Since it was
National Tea Day this month I thought I would do a twist on afternoon
tea and put the clotted
cream in a cake. If you prefer a plainer cake this is perfect for
you but the flavour of the cream still comes through. It was decided
this was like eating vanilla ice cream in cake form!
