It's back to
school for the Junior JibberJabbers this week. This means homework,
after school clubs and less time for cooking! There's always time for
treats though and after hard work rewards are required. I've been
making brownies to a certain recipe for years but according to Miss
and Master JibberJabber they are so good that the recipe can't be
shared! For days when I need a recipe which cooks slightly quicker
and doesn't need so many ingredients I use this one.
Equipment:
9in x 13in (22cm x 33cm) baking tin lined, large bowl, electric
whisk/beaters.
Ingredients
8oz (220g)
Plain flour
14oz (400g)
Caster sugar
½
tsp (2.5ml) Salt
2oz
(55g) Cocoa powder
10
fl oz (280ml) Sunflower oil
4 Eggs
4 Eggs
2tsp
(10ml) Vanilla extract
2oz
(55g) Plain chocolate, broken into pieces
Method
1. Pre-heat
the oven to 180°C/Gas
mark 4.
2. Mix
all the ingredients together except the plain chocolate until it is
one smooth mixture.
3. Transfer
to the tin and smooth the top.
4. Cook
for 10 minutes and then sprinkle the plain chocolate on top.
5. Cook
for a further 20 minutes and leave to cool in the tin.
