A fruited
tea loaf has always been one of my favourite cakes. It's very easy to
make as you simply let the fruit soak in the tea and when it is plump
you mix in the other ingredients. I know other people love it as well
as it is one of the top sellers at the bake sales I do. Whenever I do
a bake sale I try to make sure I have a range of cakes for all
needs. Many people are now trying to lower their sugar intake and so
often cake can be a no-no. This recipe has no added sugar in it. Of
course the dried fruit has natural sugar in but no more is added. To
replace the sweetness I have added spices for taste which work really
well. If you look at the recipe you will also notice that this has no
added fat as well.
Equipment:
2lb (1kg) loaf tin lined, large bowl, wire rack.
Ingredients
12oz (340g)
Mixed dried fruit
¼
pint (140ml) Strong tea
8oz
(225g) Self raising flour
1tsp
(5ml) Mixed spice
¼
tsp (1.25ml) Ground Nutmeg
¼
tsp (1.25ml) Ground cinnamon
3
Eggs
Method
1. In
a large bowl put the fruit and tea. Leave to soak overnight or for at
least 8 hours.
2. Pre-heat
the oven to 180°C/Gas
mark 4.
3. Add
in the other ingredients and mix until there is no dry ingredients
showing.
4. Transfer
to the prepared loaf and spread out evenly.
5. Bake
for around 1-1¼
hours (check after 45 minutes to make sure the top isn't cooking too
quickly.) until a skewer comes out clean.
6. Remove
from the tin, take off the liner and leave to cool on a wire rack.

Fruitcake definitely doesn't need added sugar...... This sounds delicious Ness! x
