From royal
wedding inspired cakes to seasonal ingredients we have a lovely
selection of cakes this month. Let's see what everyone has been
baking.
A kitchen
cupboard clearout and a seasonal find in the garden inspired Kate at
the Gluten
Free Alchemist in her retro flavoured gluten free Rhubarb and
Custard Layer Cake with Pistachio Sponge. A nutty flavoured
sponge cake filled with traditional custard and a homemade rhubarb
compote.
Another
kitchen cupboard declutter unearthed a packet of poppy seeds for
Caroline
Makes.... With neighbours invited round for a visit she paired
them with lemon for a classic cake combination. A lemon icing glaze
on top finished it off.
Why have one
cake when you can bake two in one go? This is a question answered by
Choclette of Tin
and Thyme. She has spent years perfecting flavours and recipes
and this has resulted in her Double Delight Bundt Cake – Chocolate
Rum and Raisin and Coconut and Lime. When baked in a bundt tin the
look of the cake complements the flavours perfectly.
The first of
my bakes has a healthy twist to it. The No
added sugar tea loaf is also fatless with all the sweetness and
moistness coming from the soaked dried fruit.
As a
contrast I paid tribute to the marriage of Prince Harry and Meghan
Markle with my own take on their wedding cake. This elderflower
and lemon cake has two layers of lemon cake both filled with
elderflower infused lemon curd. It is then smothered in elderflower
flavoured buttercream.
