It's been
another quiet month for Love Cake and the theme of Use your loaf.
I've actually baked several of my favourite loaf cakes for Macmillan
coffee mornings and group walks this month. The Crunchy
lemon drizzle loaf cakes and Fruit
tea loaf always go down a treat.
I chose this
month to make use of some of the autumnal fruits from our allotment.
We get a supply of raspberries in the summer months but the biggest
raspberries, both in terms of size and yield, comes in the autumn.
For a quick cake on a Sunday afternoon I decided to make a Chocolate
and raspberry loaf cake. I nearly came a cropper when I found I
barely had any cocoa powder. I refused to let my cake making plans be
thwarted and just lowered the amount of cocoa in the cake. It was
still able to deliver the necessary chocolate hit.
