What could be more of a
family favourite meal than sausages, baked beans and potatoes? On
their own a good, tasty meal but not that exciting. So this is my way
of jazzing it up a bit, adding some veggies and cooking all in one
pan – less washing up! If you want to add extra veggies or save on
the chopping up add some frozen peas or a mixed vegetable selection.
Eagle-eyed readers may
notice the pan in the photo is not my old Le Creuset Racing Green
one. Sadly it has died a death because the enamel started to come off
it. As it was made before 2000 it couldn't be saved. In its place I
bought one from Sainsbury's
which was on offer at £29.99 - £100 cheaper than a new Le Creuset
one!
Equipment: Cast iron
30cm pan or large frying pan and open-proof dish.

sunflower

2 Carrots, diced

400g
tin Baked Beans

(500g) Potatoes, unpeeled, sliced thinly
3½
