Sausage and potato traybake


I love a traybake be in cake form or something savoury. Easy to prepare, all in one dish and therefore minimal washing up! This is a great family dish. You can't go wrong with sausages whether they are pork or vegetarian. The chunky potato wedges will fill you up while the peppers add a natural sweetness to the flavour. Add some carrots to get those extra veggies on your plate and you're ready to cook then serve.


Equipment: 1 large oven proof dish

Ingredients

1tbsp Olive oil
1 Onion, peeled and sliced into thin wedges
8 Sausages
4 Sprigs of fresh rosemary
1lb (500g) Maris Piper potatoes cut into wedges
1 Red pepper, sliced
1 Yellow pepper, sliced
2 Carrots, cut into batons

Method

1. Pre-heat the oven to 220°C/Gas mark 7.
2. Put the olive oil into the oven proof dish and then add the onion. Stir the onion so it is coated by the olive oil. Cook for 10 minutes.
3. Reduce the oven temperature to 200°C/Gas mark 6.
4. Add the sausages and stir so they are covered by the oil. Snip the rosemary over the sausages. Then add the potatoes, peppers and carrots and stir it all together.
5. Cook for a further 25-30 minutes, turning the mixture regularly to ensure everything is browned evenly.

  16. If I swap sausages for Quorn ones I can happily call it comfort food :) I'm not veggie though, just try to avoid meat lately.
