The sun has been threatening to fool people into thinking it's summer this week when in reality it is still barely spring. I've seen shorts, T-shirts, flip flops and quite frankly too much bare flesh than is necessary at any time of year let alone in the middle of March. One thing is certain though – it is definitely not BBQ weather but it is always slow cooker weather.

Janice at Farmersgirl Kitchen has set this month's Slow Cooker Challenge as Barbecue, which is something I've never attempted in my slow cooker before. It was time to give it go! I wasn't sure how it would go down with the rest of the family but they all gobbled up the lot and demanded it should be made again. Yes, the pineapple does lend a retro touch to it but it really does add to dish. Who cares about fashion anyway when food tastes good?

Serves 4

Ingredients

1lb (450g) Pork shoulder, diced
1 Onion, chopped
1 tbsp (15ml) Tomato purée
3 tbsp (45ml) Vinegar
2 tbsp (30ml) Demerara sugar
1tsp (5ml) Dijon mustard
2 tsp (10ml) Henderson's Relish or Worcestershire Sauce
¼ pint (150ml) Beef stock
4 Pineapple rings

Method

1. Pre-heat the slow cooker to HIGH while you prepare the ingredients.
2. Put the pork and onions into the slow cooker.
3. Mix together the tomato purée, vinegar, sugar, mustard, Worcestershire Sauce, and stock and pour onto the pork and onions.
4. Cook on HIGH for 3-4 hours or LOW for 6-8 hours.
5. 30 minutes before serving (while you prepare your serving accompaniments) add the pineapple rings and cover with the sauce.

  2. Yum ..... what is Henderson's relish? Luckily I have Worcestershire sauce ....

    1. Henderson's Relish is similiar to Worcestershire Sauce. It's made in Sheffield and no South Yorkshire home is complete without it! I wrote about it in my Lasagne post http://www.jibberjabberuk.co.uk/2014/02/lasagne.html

  3. I often do pork with barbecue sauce in the slow cooker so maybe next time I do it I'll have to go retro style too and add a bit of pineapple.
